So this week I finally had some time to bake with Brooke and Caleb. My goal was to bake some cookies and dip them into a little bit of chocolate and sprinkles.
Well...everything went well. We baked, we dipped, we sprinkled. (With a little help from their cousin Amia)
And then I got to looking at them and then started to giggle inside because they looked like they were little people with hats on.
So I did what most people would do and gave them little eyes, smirks and whole lots of personality.
I gave some a little too much personality.

Then you have the "too-cool-for-school" kids who pull down their toques a little and pretend that they don't like singing. They probably feel like smacking the first kid.
These cookies are trouble, I say...TROUBLE!!
They are super simple cookies to make.
Vanilla/Chocolate Wafer Cookies
3/4 cup + 2 Tbsp butter
1 cup icing sugar
1/4 tsp vanilla
1 lg egg yolk
2 cups flour
1/4 tsp salt
1-2 Tbsp dutch process cocoa powder
1. Cream the butter, icing sugar and vanilla until light and fluffy.
2. Add the egg yolk and mix until well blended
3. Stir together flour and salt and then add it to the wet ingredients.
4. Mix until soft dough forms.
5. Divide in half and mix the cocoa powder into half of the dough. (I had to knead this in by hand because my mixer wasn't doing a very good job of it)
6. Roll out the dough very thin, less then a quarter inch.
7. Bake at 350 F for 10-12 minutes.
*Note: You could always make them just white by omitting the cocoa or make them all chocolate by doubling the cocao powder and adding it to all the dough.
For the chocolate, I melted melting chocolates in the microwave with about a teaspoon of vegetable shortening. If the chocolate is too thick to dip nicely then just keep adding more vegetable shortening until it gets to the desired consistency.
The kids dipped the cookies in the chocolate and then loaded them up with sprinkles. I popped them in the freezer for a few minutes to set up and then we ate some of the broken ones.
I used some fondant I had on hand for the eyes and an edible marker for the mouths. However, you could just pipe frosting on if you don't have fondant handy.
Yes, I full realize how dorky I am for creating a back drop for the cookies but how could I not with such cuteness to photgraph?!!
Anyway...we can't wait to share these cookies! (And by we, I mean me and Brooke because Caleb is being oddly possessive of them!)
